French Silk Cheese Pie Recipe
**chocolate graham cracker -crust** 1 1/2 c graham cracker crumbs 1/4 c brown sugar,firmly packed 1/3 c butter,melted 1 oz unsweetened chocolate,melted **filling** 6 oz semi-sweet chocolate chips 8 oz cream cheese,softened 3/4 c brown sugar,firmly packed & divided 1/8 t salt 1 t vanilla 2 ea eggs,separated 1 c whipping cream,whipped
Crust: Mix all ingredients thoroughly. Press firmly into a 9" pie pan. Chill until firm.
Filling: Melt chocolate chips over hot, not boiling water; cool about 10 minutes. Blend cream cheese, 1/2 cup brown sugar, salt, and vanilla. Beat in egg yolks, one at a time. Beat in cooled chocolate; blend well. Beat egg whites until stiff but not dry. Gradually add remaining 1/4 cup brown sugar. Fold in whipped cream. Pour into chilled crust, reserving 1/4 of mixture for decorating. Chill until filling sets slightly. With tapered spoon, drop reserved mixture in mounds over top of pie. Chill until firm. Decorate with rosettes of whipped cream and shaved semi-sweet chocolate.

Fresh Blackberry Pie 1 9" pie shell with top crust -Unbaked 1 c sugar 5 T flour 1/2 t cinnamon 1/4 t salt 4 c blackberries,fresh 2 T butter
Preheat oven to 425 degrees.
Mix sugar, flour, cinnamon & salt together & carefully blend through the berries. Pour berries into unbaked pie shell. Dot with butter. Cover with top crust, flute edges & vent top. Bake at 425 degrees for 15 minutes, then reduce oven heat to 350 degrees and bake for 30 minutes longer, or until golden brown.
