Prize Pecan Pie Recipe
Yield: 8 Servings 3 lg eggs 1 c dark brown sugar,firmly -packed 1 c light corn syrup 2 T butter (or margarine ) -melted 1 t vanilla extract 1 T bourbon 1 1/2 c pecans,coarsely chopped 1 9 pie shell,Unbaked
Preheat oven to 350 degrees (F). Beat eggs slightly in a medium bowl. Add sugar, syrup, melted butter, vanilla and burbon. Stir until well blended. Stir in pecans and pour into an unbaked pie shell. Cover the edge of the pie with foil to prevent overbrowning.
Bake 25 minutes, remove foil and continue to bake another 25-30 minutes, or until a knife inserted halfway between the center and edge comes out clean.

Prize Winning Chocolate Fudge 3 oz unsweetened chocolate 1 c milk 3 c sugar 4 T light corn syrup 1/8 t salt 3 T butter 2 t vanilla` 1/4 c walnuts,Broken
Cut chocolate in small pieces. Combine with milk in a heavy 3 uart saucepan. Cook over low het, stirring constntly until milk is scalded & chocolate is melted.
Stir in sugar, corn syrup & salt
Cook over mediumheat, stirring until sugar dissolves. Cook without stirring until mixture cools reaches 236 degrees
Remove from heat add butter without stirring. Let stand, without stirring until mixture cools to lukewarm 110 degrees
Add vanilla. Beat vigorously until candy loses its gloss and starrts to thicken stir in nuts.
Pour into lightly ubttered 8" square pan, being careful not to scrape pan. Cut when firm into 36 pieces. Makes 1 1/2 pounds.
