No-Roll Sugar Cookies Recipe
Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup granulated sugar 1 cup powdered sugar 1 cup butter or margarine -- softened 1 cup vegetable oil 2 teaspoons vanilla 3 1/2 cups all-purpose flour 3/4 cup cornstarch 1 teaspoon baking soda 1 teaspoon cream of tartar 1/2 teaspoon salt Granulated sugar
Beat sugars, butter, oil and vanilla in large bowl with electric mixer on medium speed, or mix with spoon. Stir in remaining ingredients except granulated sugar. Cover and refrigerate about 2 hours or until firm.
Heat oven to 375º. Shape dough into 1-inch balls. Place about 2 inches apart on ungreased cookie sheet. Press bottom of glass into dough to grease, then dip into granulated sugar; press on shaped dough until about 1/4 inch thick. Bake 6 to 8 minutes or until set but not brown. Immediately remove from cookie sheet to wire rack.
Oatmeal Cookies
Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package yellow cake mix 2 cups quick-cooking oats 1 cup sugar 1 cup vegetable oil 2 eggs 1 cup chopped pecans 1 1/2 teaspoons vanilla
Heat oven to 350º. Mix cake mix (dry), oats and sugar in large bowl with spoon. Mix oil and eggs; stir into oat mixture thoroughly. Stir in pecans and vanilla.
Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake about 12 minutes or until light brown. Remove from cookie sheet to wire rack.
