Garlic and Cheese Vegetarian Mushroom Pizzas Recipe
Since you can make pizza any way you want, feel free to add any of your favourite toppings to any of the pizza recipes, the ones provided are just the basics to different styles of pizza.
Stored in the fridge in an airtight container it will keep for 1 day.
Ingredients To make the dough • 3½ all-purpose flour • 2 tsp active dry yeast • 2 garlic cloves, crushed • 2 tbsp chopped thyme • 2 tbsp olive oil • 1¼ cups tepid water To make the topping • 2 tbsp vegetarian margarine • 5 cups sliced mixed mushrooms • 2 garlic cloves, crushed • 2 tbsp parsley, chopped • 2 tbsp tomato paste • 6 tbsp canned tomatoes, sieved • ¾ grated mozzarella cheese • Salt and pepper to taste • Parsley, chopped, to garnish
1. In a large bowl place the flour, yeast, garlic and thyme. Make a well in the center and gradually stir in the oil and tepid water. Bring mixture together to form a soft dough. 2. Place dough on a flour counter top. Turn the dough and knead for 5 minutes, or until it turns smooth. Roll into a 14-inch round and place on a greased cookie sheet or pizza pan. Set aside in a warm place or until the dough puffs up which should take about 20 minutes. 3. While dough is rising, melt the margarine or butter in a heavy-based skillet over medium heat. Sauté the mushrooms, garlic, and parsley for 5 minutes, stirring occasionally. 4. Preheat oven to 375°F. Mix the tomato paste and tomatoes and spread onto the pizza dough, leaving about ½ inch edge of dough. Spoon the mushroom mixture on top and season well with salt and pepper. Sprinkle the cheese on top. 5. Place the pizza in the oven and cook for 20-25 minutes, or until the base is crisp and the cheese has melted. Garnish with the chopped parsley and serve.
