Vegetarian Burritos Recipe

When making burritos make sure you have enough people to finish them all because, as you may already know, don’t reheat well.
Ingredients

• 6 tortillas
• 1 tbsp oil
• 1 onion, chopped
• 1 pound canned re-fried beans
• 6 lettuce leaves, shredded
• 1 cup Cheddar cheese, grated
• 2 tomatoes, diced
• 2 tbsp snipped chives
• 1 batch Taco Sauce
• ½ cup low-fat sour cream
• Fresh cilantro leaves, chopped

1. Preheat oven to 350°F. Wrap the tortillas in foil and place in the oven to soften.
2. Heat oil in a large skillet over medium heat and add the onion. Cook until the onions are soft and add the beans.
3. Once the beans have heated through, take tortillas out of the oven, leaving heat on. Using a large spoon, spread the mixture down the centre of each tortilla. Top with shredded lettuce, Cheddar cheese, tomatoes, and chives. Fold over the sides of the tortilla to form a long rectangular looking parcel, making sure that the filling is completely enclosed in the tortilla.
4. Take an ovenproof dish and place tortillas inside. Cover and place into the oven to cook for about 20 minutes.
5.  Place burritos onto serving plates and spoon taco sauce over the burritos. Top with sour cream and sprinkle on chopped cilantro as garnish. Serve immediately.
